1. Rebus daging sapi dalam air, serai, daun salam, daun jeruk, ketumbar, jinten, lengkuas, dan jahe hingga empuk.
2. Panaskan minyak goreng dalam wajan, tumis bawang merah dan bawang putih hingga harum.
3. Masukkan tomat, wortel, kentang, dan kol, aduk rata.
4. Tuang tumisan ke dalam rebusan daging, tambahkan garam dan gula pasir secukupnya.
5. Buat koya: haluskan kacang tanah, kelapa sangrai, bawang putih sangrai, kemiri sangrai, ketumbar sangrai, jinten sangrai, dan kunyit bubuk.
6. Sajikan soto daging koya dengan nasi dan taburan koya.
